There is a need to be filled for fresh gluten free products due to a greater percentage of people being diagnosed with Celiac Sprue and making the choice to live without wheat and other genetically similar products. There are different levels of gluten intolerance and this population can also be referred to as “celiac sufferers”. Celiac disease may have an ancient history dating back to the 1st and 2nd centuries AD. The first clear description was given by Samuel Gee in 1888. He suggested that dietary treatment might be of benefit. Celiac disease is most common in European countries, particularly in Ireland, Italy, Sweden, and Austria and has more recently come to the forefront of allergy awareness in the United States.
